Wellness Wednesday: Whole 30 Approved Sausage Stew

Yesterday I announced that I am restarting with Whole 30, and with that comes delicious approved recipes. While scouring through Pinterest to find some delicious finds I came across a sausage stew recipe that I decided to try out. As I was following the recipe I modified the dish to fit more of my palate, and what was available in my fridge. This recipe is seriously so tasty because it has hints of savory, sweet, and a touch of spice all mixed into one! This is probably one of my favorite recipes I have ever shared on my blog. Ingredients

  • Olive Oil
  • 1 (12 oz) smoked sausage cut into circles
  • Onion diced (I personally like red onion)
  • 2 tsp italian seasoning
  • 1/2 tsp paprika
  • 1/2 tsp pepper
  • 1/4 tsp crushed red pepper flakes
  • Pinch of salt to taste
  • 4 garlic cloves pressed
  • 1 carton of chopped mushrooms
  • 2 sweet potatoes cubed
  • 4 celery ribs diced
  • 2 parsnips peeled, and diced
  • 2 carrots peeled, and diced
  • 6-8 cups of low sodium chicken stock
  • 1 bushel of kale chopped

Directions

  1. Cut all your veggies, and sausage. Place to the side. 
  2. In a large pot heat 2 tbs of olive oil.
  3. Once the oil is hot place the sausage in the pot in a single layer. Allow to caramelize on one side for 3 minutes, and then stir for further caramelization for 2 minutes. 
  4. Stir in the onion with the sausage, and allow for onions to cook with the sausage for 3-4 minutes. 
  5. Stir in the italian seasoning, paprika, pepper, red pepper flakes, salt, and garlic to the sausage onion mixture. Once stirred through add mushrooms, sweet potatoes, celery, parsnips, carrots, and chicken stock. 
  6. Bring the stew to a boil, and let simmer uncovered for 35 minutes. 
  7. Add the chopped kale, and allow to simmer for another 5 minutes until kale is wilted. 
  8. Serve hot, and enjoy :)

Whole 30 Restart

Yesterday marked the first day of being on Whole 30 again. I did Whole 30 once, and really liked it minus the fact of no chickpeas on the menu for 30 days (girlfriend loves her hummus). Getting back on Whole 30 started when one of my Senegence teammates asked me about my Whole 30 book in the background of a selfie. She asked me if I was starting to do Whole 30 because she loved it. From there we decided to do Whole 30 together, and I am now documenting my Whole 30 adventure with a few other people on my Pucker & Pout Lipsense page. 

I'm day 2 into the 30 day adventure, and I'm missing my caffeine BAD. Every morning would start off with a Starbucks vent berry hibiscus wit light ice, and every time I'm craving one I tell myself "you are saving over $20 a week without them." Even though I'm craving my caffeine like crazy I know that I'm resetting my body, and getting back into healthier eating habits.

Rich Colors

Fall is my favorite season of the year, and I for the past 4 years I've lived in places that aren't conducive to an early fall. When we lived in Phoenix fall didn't start until November, and with living in Dallas I see a similar trend. When I see all my friends wear their beanies on social media back home I long for an early Dallas fall. 

While I don't have the luxury of sweater weather quite yet I am strategically transitioning to my fall wardrobe when it's still 80-90s outside. One of the biggest ways I transition my wardrobe is through color.  I start to incorporate fall hues into my street wear in the form of jeans, accessories, light weight blouses, and accessories. Rich colors are my jam, and love to incorporate them whenever I can. 

By pairing these high waisted wine jeans with a short sleeves blouse, and open toes shoes allows me to rock fall fashion without having to die of heat. What's your favorite way to rock fall fashion when it's still warm outside?

Baby I'm Back!

Ever since I got back from Utah it has been a whirl wind in the Edmunds household. My house is a complete mess, my office floor is covered with Senegence packing materials, dishes every wear, laundry that needs to be put away....

You catch my drift?

I've never been the one to actively clean because I am so busy working or going to the gym that my house to do list never gets touched. The one thing that has occupied my time the most lately is planning my first big project here in Dallas. AHHH I'm so excited you guys! A couple weeks ago on of my Arizona friends Ryann from Ryann Lindsey photography text me if I wanted to do a shoot somewhere in Texas. She literally text me at the moment when I was starting to put together a mood board for a shoot that I wanted to make happen. I told her about the concept, and she jumped right on board. Once Ryann was on board I started to go 110% in my shoot planning by getting all my vendors together, and still have a few details to work out.

You guys... this is going to be amazing!!!! Baby I'm back!

Valuing the Time Together

I can't even begin to tell you how amazing Sunday was!!! Why?!

Did I go on some type of adventure?

New restaurant?

Vacation??

Nope none of that! Sunday was amazing because I got to spend the whole day with my little family of three. Todd, Django, and I! Sunday morning I had a Pure Barre team photoshoot, and then when I got home I was surprised to see Todd home so early since he normally comes home in the afternoon after a 36 hour shift. Once I got Django settled down from his initial "I walk in the door" excitement, Todd then asked me if I wanted to go to church. Religion is both important to both Todd and I, but I will admit that we haven't attended a single day of church since we have been in Dallas. 

Why? Todd's schedule is so crazy that he's only had two weekends off since we have been here, and on the Sundays when he comes home from a 36 hour shift he needs to sleep. 

Why haven't I gone by myself? I probably will make friends if I attend church by myself I would rather be home when Todd comes home from work just so I can see him. Now I am NOT the girl who needs to be with her husband 24/7! I am actually quite the opposite. I am very independent, work my day around my own schedule, and find joy in doing projects for my businesses outside of being home. Since our life changed 3 months ago I value, and crave time together as much as we can fit in. 

When Todd asked me to attend church yesterday allowed me to just spill my heart out to him. I told him that we both value going to church, but I value our time together more at this point of our lives. Part of being an ambitious couple has become putting our relationship on the back burner in order for us to succeed in our careers. Back in January we were a dark place in our marriage, and we both hit an all time low. Ever since then we decided to go to counseling, and work through our issues in our marriage. One thing that I realized is that we need to spend quality time together playing, and reconnecting with one another. 

Yes we can spend time together going to church, but that's not what our relationship needs. That's not what I need now. I need more. I need to be able to spend hours with my husband playing outside, making memories, laughing, exploring, and get back to dating again. We have such limited time together that we need to spend it doing things that will strengthen our connection with one another, and not cave into our religious responsibilities. If we were in a different place in our lives where his crazy doctor schedule didn't prevent us from hanging out I wouldn't being saying this, but this is life now. 

After about 30 minutes of me crying about my feelings we both decided that Sunday was going to be spent hanging out as a family. All day was filled with going to parks, lakes, and then going to see a movie. Yesterday was perfect, and just the thing I needed to take on the week.

Workout Wednesday: Fit For Barre

Feels like eternity since I've done a "Workout Wednesday" brand feature, and it feels so good to be sharing this with you today! I've said this countless times, but the day when "athleisure" became acceptable day wear was the day I screamed "Hallelujah!" Seriously.... leggings are life!

If you follow me on my Instagram stories then you would of seen that my M-F wardrobe is activewear. As a Pure Barre teacher I'm rushing between 3 studios everyday, and who has the time to change from activewear - to real clothes - to activewear?!!! Not this girl!

Since tanks and leggings are my daily essentials for teaching I gravitate towards pieces that are stylish and modern to look somewhat put together. I love adding new brands to my daily wear, and I was so excited when I discovered Fit For Barre. The best part about this brand is that it was designed by/for those who take barre. 

 When I finally got my package in from Fit For Barre I was in love with the motto leggings, top, and barre socks they sent me. As of now I am OBSESSED with motto leggings because these can easily be worn on the street with a pair of boots for the fall and winter. You all know I love me some color, and I'm starting to add more fall colored pieces to my closet. I love adding pops of green, maroons, and reds whenever the leaves start to change. When I got this grey/sage tank in I knew it would be a perfect piece for fall. Besides the color the style of this tank is so fun, and different from the typical muscle tee style thats in now.

Vacation Mode Off

For all of those who have been so patient with me I can't even tell you how much I appreciate it, and that you continue to check my blog even though I have been somewhat absent lately. Let me just say vacation mode is off, and this blogger is back!! Happy dance time!

Life update time. Since Todd and I moved to Dallas 3 months ago I have been beyond home sick, and needed to come home to Utah. My cup has felt empty lately, and Utah was just the thing to fill it right back up. Last Thursday I woke up at the crack of dawn (what else is new ;) ) to get on my flight to go back home to Utah via Uber. I would have had Todd drive me, but the boy was on a 36 hour shift at the hospital. 

I was lucky enough that my dad was able to come pick me up from the airport, and that he was taking two days off work to hang out with me. We drove back to his place where we hung out for a few hours until it was time for me to go get my hair done, and trust me it needed to get done!!! I LOVE getting my hair done because a) Bria my hairstylist is one of my besties, and gives us so much time to hang b) I love a fresh color ! 

Friday was spent hanging with another bestie, and her twins. Back in April I made a trip to Utah to document her birth story, and this was the first time I've seen the twins since they have been born. Seeing their cute faces made my heart burst, and I couldn't stop cuddling those sweet babes!

Saturday was filled with hanging with family, and celebrating one of my sisters bdays early. 

My trip back home is exactly what I needed to remind myself that I have an awesome support system back home, and that I can always come back when I need my cup filled up :)

I hope you all had a wonderful labor day weekend. I wish I could say that mine was all-that-and-a-bag-of-chips, but the weekend was kind of a flop in the Edmunds home. Friday night I scratched my eye with my contacts leaving me with a blood shot red eye that was super sensitive to light. Saturday was spent laying in bed trying to let the eye heal, and then we decided to meet up with some dental school friends that came down from Oklahoma. Since they were in Dallas for a limited amount of time I decided to brave the day light blind, and let Todd be my seeing eye dog. We met up at the Boho farmers market where I rocked my new shades, and about three peach lemonades. I am so glad that I pulled myself out of bed to see some familiar faces in Dallas.
