Wellness Wednesday: Healthy Chicken Caprese Dinner

Recently I've gotten lots of inquiries about my recipes that I share on my Instagram stories, and decided to share one I made for dinner for "Wellness Wednesday." 

Since we have taken on a mortgage payment I am trying to figure out ways how we can budget our money (we've never been good to sticking to a budget), and have started budgeting out our grocery bill this week. One thing you got to understand about me is that our food bill is huge because I'm constantly buying produce, and would rather have protein and veggies for dinner vs carbohydrates as a filler. 

When Monday rolled around I looked in my fridge, and saw I had a tomato, some garlic, and chicken. Automatically when I see a tomato I think of a caprese salad! Currently we are growing basil in our backyard, and that even added to my caprese idea. After I made up my mind about what I was going to cook I ran to the grocery store to buy fresh mozzarella, arugula, and balsamic vinegar. 
I walked out of the grocery store spending less than $10, which alone is an accomplishment to me. 

Dinner ended up being quick in the prep time, and cooking time. It of course tasted amazing, and the leafy greens prevented that food belly bloat.

Chicken Caprese Dinner Recipe

Ingredients

  • 2 pounds of chicken tenders
  • Fresh mozzarella sliced
  • Arugala
  • Fresh basil minced
  • 1 large tomato sliced
  • 1 1/4 cup Balsamic Vinegar
  • 1 Tbsp olive oil
  • 4 garlic cloves minced
  • 1/2 tsp dried rosemary
  • 1 Tbsp dried oregano
  • Salt 
  • Ground pepper

Directions

  1. In a large plastic bag or container create your chicken marinade by adding chicken, 1/4 cup balsamic vinegar, olive oil, garlic, oregano, rosemary, salt, and pepper. You can either marinate overnight for a richer flavor or make as is. 
  2. When marinade is ready preheat oven to 400 degrees.
  3. Line a pan with tin foil (makes for an easier cleanup), and place chicken in the pan. Top the chicken with excess marinade. 
  4. Bake the chicken for 15-20 minutes until done. 
  5. While the chicken is cooking create the balsamic reduction.
  6. Place 1 cup of the balsamic vinegar in a small pot over medium-high heat on the stove. Once it reaches a full boil reduce the heat, and simmer for 10 minutes. Stir occasionally to prevent burning. 
  7. Once chicken and reduction are done remove from heat. 
  8. In a bowl place a handful of arugula, sliced tomato, sliced mozzarella, basil, and chopped chicken together. Top the salad with drizzled reduction and fresh ground pepper. Eat up and enjoy!

Happy Tuesday my friends. Today is super exciting because more stuff is coming for my living room, and I finally have the electricians coming over to hang the chandelier in the room! 

I wanted to stop by today to share this outfit that I wore to church last Sunday. This outfit was completely unintentional, and searched for clothes that weren't wrinkly as I rushed through the door. As Todd and I were driving to church I realized that I actually loved this outfit that I threw together! 

Sometimes the best outfits are the ones that you don't have time to overthink ;)

Petite Review of the Topshop Vertical Stripe Sweater: When I first saw this sweater I was smitten with the colors. I'm currently wearing the 0, and it fits me perfectly. In my opinion it runs small and short for normal people so size up!

Summer Easy Jumpsuit and a Living Room Update

Happy Monday blog fam! I don't know about you, but this weekend flew by so fast. If you follow my Instagram stories then you would have seen that Todd and I worked all weekend on refinishing a buffet/console for our living room. 

We decided to refinish a piece of furniture for multiple reasons. The first reason is that since we have vaulted ceilings I couldn't find a console that was tall enough with our tv to hold the space. The second reason is that I couldn't find anything in the color scheme that matched the living room color palette. The final reason is we couldn't find anything within our budget.

Over the past two weeks Todd and I have been scouring the Facebook marketplace and Craigslist for the perfect console. Last week I even ventured to multiple Goodwills and Salvation Armies within an hour radius, and unfortunately they were all a bust. Back in Arizona the thrift stores were so amazing, and always had a variety of home furnishings. Pennsylvania thrift stores on the other hand carry a vast amount of clothes, and have very little home furnishings. Even though the thrift stores were a no-go I found a console on the FB market place for only $30!

Todd picked it up on his way home on Friday, and immediately we got to work! I asked on my stories  whether you wanted me to do a DYI post on the process of refurnishing this console, and I was so excited when the majority said yes! I can't wait to share with you guys the before and after!

Workout Wednesday: Stretching for Tight Hamstrings

It's been a while since a "Workout Wednesday" has been posted, and I'll blame the move for that ;) Since I am finally settled expect to see Wellness/Workout features every Wednesday again from here on out!

You've heard me talk about this numerous times, but I have a tight left hamstring. I've had this problem for a few years now, and still don't know how I injured it. My injury has prevented me from doing lots of glute/hamstring work because it starts to become painful for my left side. I've learned how to work around this injury, and one of the things that has helped is continuously stretching them out. Here's some of my favorite stretches that has helped loosen up my left hamstring. 

Ground Figure 4


When laying on your back cross one ankle (stretching side) over opposite knee (supporting side). Make sure your stretching side knee stays open, and you pull your supporting side into the chest by either holding onto shin or backside of the leg. Hold for 60 seconds, and repeat for the other side. 

Pyramid Pose


While standing have your legs stay wide and straight. Fold your upper body over the front leg. To feel the deep hamstring stretch think about shifting your body back, and feel that length/stretch in front hamstring. Hold for 1-2 minutes then switch legs. 

Pigeon Pose


When I was doing yoga regularly in Texas this pose was so intense for my muscle. If you have SUPER tight hamstrings go into/ come out of this pose SLOW. For beginners you can maintain an upright posture. For more advanced hinge forward and rest forehead on the floor. I personally love holding this pose for multiple minutes, and breath deeply to work deeper into the muscle. 

Half Splits


In Pure Barre we use this stretch a lot in class after thigh work. To get the most out of this stretch make sure you dig your flexed front heel into the ground. Think of that heel as an anchor, and shift your body back while pressing the front leg down to the floor. You should feel this immediately in the backside of your front leg. Hold for a minute then switch legs.

Summer tends to be the season when you are out and about enjoying the beautiful weather, and doing summer fun activities. I'm sure we can all relate that no one wants to be running around in the 100 degree weather in those thick, hot, sticky jeans. Yes I am a HUGE jean gal, but when the temperature skyrockets I'm either running for the dresses, skirts, or my favorite linen pants. 

Linen pants are such a game changer because A) it feels like you are wearing nothing, B) don't cling, C) they are the sweatpants of summer, and D) are the easiest throw-and-go look. Pair them with a tank or a tee for an everyday look or a crop top for when tour hitting those tropical beaches. 

I got these pants a few years ago, and since they are such a staple Nordstrom keeps restocking them. Recently I wore them with a simple white tank and denim jacket for an easy errand day look.

Exciting News

Today I have some exciting news! I've been meaning to write this for some time now, but the Edmunds bought their first house!!!!!!

Yes yes it's true! I've talked recently about decorating our new place, and I'm excited to announce that we actually own our place. 

Todd and I have been married for almost 8 years, and with living in 4 states we have always rented. Since we have been transitional for the majority of our marriage renting always seemed like the best option. When we found out that we were moving to Pennsylvania we knew that we wanted to buy our first home.

We came to Pennsylvania back in March to do a little house hunting for three days. I'll be the first to admit that I wasn't the most pleasant person to be around during that trip because A) I was upset in taking the necessary steps to move from my beloved Texas to Pennsylvania, and B) the majority of the places we saw were old and run down. Since we couldn't find any homes that fit our needs we then started to look into finding rentals. Weirdly enough, there isn't many homes to rent in the areas we were looking at. 

As we were coming to the end of our home search we then came across a townhouse in Lewisburg. The townhouse was up to date, open, clean, and within 30 minutes of the hospital. It is two stories with 3 bedrooms, 2.5 baths, 3 full closets, garage, and feels very open. When we got back to Texas we started to consider our options in Pennsylvania, and we both agreed that the Lewisburg townhouse seemed like the best fit for our little family. 

Once we decided that we wanted to purchase the townhouse we then had to consider our options on how to pay for it. Even though Todd is a doctor he isn't making the "doctor money" yet since he is in his residency. We've never been good at saving money, and had no money to put as a down deposit. Luckily Todd's doctor status got us qualified for a Doctor mortgage loan.  For our loan we didn't have to put down a deposit, and have a fixed rate for 5 years. The doctor loan was such such a god send because buying this house is going to set us up for success once we move in 4 years. Once we sell our Lewisburg home we will have money to put toward our next place. 

Back in April we put in our offer, and closed in June. It's almost been a month since we've moved in, and it's already starting to feel like an actual home.
