When I got to Utah my dad made me these pizzas that were more than half the calories of a normal pizza. They weren't only delicious, but fast/easy to make. For my dads birthday I got him these grill mats (ummm you need!!!), and we decided to grill the pizzas on the mats. Ultimate success!!!
Side Note: If you want an amazing/cheap gift for a guy, these grill mats will give you some major brownie points!

Ingredients
- Olive oil
- Chopped garlic
- Flat bread or whole wheat tortillas
- Pizza sauce ( I love this Contadina one because it's super easy to whip out)
- Shredded low fat mozzarella cheese
- Toppings - I used turkey pepperonis, green peppers, onions, mushrooms
- Grill mats (these are great for not letting food fall into the grill, and are super easy to clean. Cheese won't even stick to it)
Recipe
- Chop up your toppings while the grill is preheating.
- Take the bottom of your flat bread or wheat tortilla and brush with olive oil.
- Take the chopped garlic & sauce, and place on the top part of the flat bread.
- Layer the topping onto the sauce, and then make a thin layer of additional sauce on the toppings.
- Layer with cheese.
- Place the pizza on the grill mats, and grill for 10 minutes on medium heat. Periodically check to make sure your not burning the bottom.
- Once the crust has browned, and the cheese has melted take the pizza off the grill.
- Wait 5 minutes, and then slice your pizza.
- Enjoy :)
