Wellness Wednesday: Healthy & Easy Dinner - Chicken Marsala

Sorry for the delayed post, but I have not been feeling well for the past two days. It's been a while since I've done a "Wellness Wednesday" post, and I know you are going to love this recipe!!
With both Todd and I working odd hours in the day our diet has changed to lots of Subway since we both get home exhausted from our day. Since the day I graduated high school I have never experienced so much eating out before, because I like to know what goes exactly into my food. I love cooking, and especially cooking healthy for my family. I'm all about keeping my family on a healthy diet, and set healthy eating habits. I used to make elaborate meals, but now its all about finding things that are simple & healthy to fit our new schedule. I wish I could take credit for this dish, but one of my good friends gave me the recipe. I hope you enjoy this as much as Todd because he gave it a 10/10 rating ;)


Ingredients

  • 2-4 chicken breasts
  • 1 bottle of marsala cooking wine
  • 1 cup of sliced mushrooms 
  • 2 bushels of green onions, divided, and chopped
  • 1 tablespoon of corn starch
  • 1 tablespoon of cold water
  • Green beans (optional side dish. We love to steam green beans for about 6 minutes).

Directions

  • In a large pan combine the entire bottle of marsala cooking wine, chicken breasts, half of the green onions, and mushrooms together. 
  • Cook on medium high heat for about thirty minutes with the lid on. Flip the chicken every 6-8 minutes.
  • Once chicken has cooked through remove it from the pan leaving the sauce.
  • In a bowl whisk together the corn starch, and water. Place the mixture into the sauce stirring it through. Allow the sauce to continue to cook, and thicken up without the lid for about 5 minutes. 
  • Once the sauce has thickened up serve it on top of the chicken. Garnish with chopped green onions.
