Wellness Wednesday: Clean Eating - Meal Prep

Ever since moving to Dallas life has seemed to continuously get busier and busier, with no signs of  slowing down anytime soon. When Todd and I had a schedule in Arizona we always planned to make dinner together at night, but since our schedules are irregular in Dallas that is no longer an option. Our once nightly ritual has turned into us both getting home late, and doing LOTS of Subway runs. Last weekend I turned to Todd, and told him that we need to do something about our diet. We've traded a wholesome diet into what we deem convenient, and don't want that for myself or my husband. I decided that I needed to step up my game, and start meal prepping so that we no longer have an excuse to eat clean when our bodies feel exhausted. 

Whether you are looking to lose weight, or exercise clean eating I firmly believe that if you have a plan set up then you will be successful. By taking the time to prep meals for the week will set you up for success in sticking to a diet or eating regimen. 

Two days ago I prepped both these meals, and placed them into these handy containers that I got on Amazon. I decided to buy two sizes of containers to give me options when I meal prepped. They are both microwavable which makes it convenient to grab and go. 

I hope you love these recipes just as much as me, and would love to hear if your favorite meal prep recipes to give me some ideas for future meals!

Whole 30 Shredded BBQ Chicken Bowls with Sweet Potatoes and Broccoli 

Whole 30 BBQ Sauce

Mix all together ( I doubled the amounts below to make more to freeze) - You can always sub for regular bbq sauce.

  • 1 can tomato paste ( 6 oz)
  • 1/4 cup tomato sauce
  • 1/4 cup balsamic vinger
  • 1 Tbsp coconut aminos
  • 1 1/2 tsp chili powder
  • 1 1/2 tsp chipotle powder
  • 1 tsp paprika
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 tsp all spice
  • 1/2 cup unsweetened apple sauce

Shredded BBQ Chicken with Sweet Potatoes and Broccoli 

Ingredients
  • 3 large sweet potatoes cut into 1 inch cubes
  • 2 heads of broccoli chopped
  • Large onion chopped
  • 1/2 tsp garlic powder
  • 4 Tbsp olive oil
  • 1/2 tsp salt
  • 1 tsp chipotle powder
  • 2 lb chicken breasts
  • 1/2-1 cup of whole 30 bbq based upon sauce preference (Todd loves lots of sauce ;) )
Directions
  • Preheat oven to 400 degrees.
  • On a large baking sheet line with tin foil. Line the pan with sweet potatoes and onion. 
  • Drizzle 2 Tbsp of olive oil, 1/4 tsp salt, chipotle powder, and garlic powder on top of the veggie mix. Toss well to coat. 
  • Bake for 20 minutes. 
  • Pull sheet out of oven, toss the potatoes/ onions, and push to one side of the pan. 
  • Add the broccoli tossed in 2 tbs olive oil + 1/4 tsp salt, and place to one side of the sheet . 
  • Add the chicken breasts to the sheet with bbq sauce brushed on both sides. 
  • Bake the whole sheet with everything on it for 15-20 minutes until chicken is done. 
  • Remove cooked chicken from the pan, and shred it with a fork. 
  • Toss shredded chicken in desired amount of bbq sauce. 
  • Serve with veggies

Whole 30 Tomato Sauce with Turkey Meatballs

Whole 30 Tomato Sauce

Mix all together, and warm the sauce in a sauce pan. ( I doubled the amounts below to make more to freeze) - You can always sub for regular spaghetti sauce. 
  • 2 Tbsp garlic oil
  • 1 24 oz tomato sauce
  • 1 14.5 oz fire roasted tomatoes
  • 2 Tbsp coconut aminos
  • 1/2 tsp dried parsley
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/2 tsp dried rosemary
  • 1 tsp dried thyme
  • 1/4 tsp black pepper

Turkey Meatballs with Steamed Broccoli and Carrots

Ingredients
  • 2 lbs ground turkey
  • 4 garlic cloves minced
  • 1/2 cup minced onion
  • 2 tsp dried oregano
  • 1 Tbsp dried parsley
  • 1/2 tsp crushed red pepper
  • 1 cup panko bread crumbs
  • 2 eggs
  • salt and pepper to taste
  • Optional: Cheese
  • Chopped brocoli and carrots steamed on a stove top. 
Directions
  • Preheat oven 400 degrees.
  • Take a baking sheet, and line with tin foil. Spray the foil with cooking spray.
  • Mix all ingredients together in a large bowl, and shape the turkey into balls to place on the sheet. 
  • Bake the meatballs for 10 minutes, flip, and then bake for another 10-15 minutes. 
  • Remove from oven, and toss in warm tomato sauce. 
  • Apply cheese on top to melt.
